Gyokuro Green Tea - What It Is And How To Brew It

By Kevin Moore If you consider yourself an advanced green tea connoisseur, perhaps you may have considered or have even tried brewing gyokuro. Since good gyokuro is expensive, its common for people to try it once, not find it to their liking, and then give up on it. This is often a result of an enthusiast brewing it like they brew their normal sencha green tea. Once you have tried a good gyokuro brewed correctly, however, you will understand what a great green tea it actually is. In case you are not aware, gyokuro is shade grown green tea. About 3 weeks before the anticipated harvest date, the tea bushes are covered under 90% shade. This is accomplished by building an enclosure around the plants using bamboo poles covered with rice straw. All of this of course means extra labor, which has a lot to do with why gyokuro is so expensive in the first place. Obviously, there is a reason why growers go to all of this trouble gyokuro is delicious! Probably the most important aspect of brewing gyokuro is temperature. Gyokuro needs to be brewed at a lower temperature than other green teas, about 155 Fahrenheit (68 Celsius.) Since water boils at 212F, obviously the temperature needs to be reduced somehow. Even when cooled, however, one cant really start the process with water that is 155F for numerous reasons. If one pours 155F water into a teapot that has been sitting at room temperature, expect that the water will no longer remain at 155F, but will instead drop about 15 degrees. Great, now were at 140F too cool for brewing. If in turn one pours that tea into two teacups sitting at room temperature, expect another 15 degree temperature drop. Now were at 125 F, and two cold, boring cups of improperly brewed gyokuro. So the devil is in the details, and to brew a good cup of gyokuro, these things need to be taken into consideration. To brew a good cup of gyokuro, you will need to use more tea. Where you normally can get away with a teaspoon of loose leaf sencha in an 8 ounce teapot, for gyokuro you will need instead about 1 tablespoons of tea per person, and about 5 or 6 ounces of water for each person served. One other aspect of brewing gyokuro that is often overlooked is the teapot that one brews it in. Gyokuro, like other green teas, is compact. That means it needs a lot of room to expand when its brewed. You will never be able to brew good gyokuro (or really, any other good green tea) in a paper filter, tea ball, or anything ridiculous like that. The preferred teapot here would be the ceramic Japanese type which has a stainless steel screen inside as a filter. I’m not talking about the kind where a steel infuser cup sits inside the lid, but instead where the screen actually is butted up against the inside of the teapot. This gives the tea plenty of room to expand. Additionally, Japanese teapots are usually just the right size for the job. This is not to say you cant use other types of teapots. Western teapots and the like can be used as long as you know what you are doing and take all of the above into consideration. To get down to brewing, I think I can best sum this up by saying the traditional Japanese way of brewing their green tea is also probably the best way to do it, no surprises there. So lets make two cups of gyokuro green tea. You will need three empty teacups, your teapot, and a good gyokuro. Start off by boiling your water in a kettle. When the water just starts to boil, immediately turn off the heat and allow the water to cool on its own for a few minutes. Pour your hot water directly into the empty teapot, filling it, and allowing the teapot to sit a minute or so and warm up. This not only warms the teapot, it also cools the water some. Next, pour the hot water from the teapot into two of the three cold teacups, and then empty the remaining water from the teapot. At this stage we now have a warm teapot, two teacups with hot water in them, and a cold, still empty third teacup. More likely than not, the hot water in those two teacups is still a bit two warm for gyokuro, so what you will want to do is pass back and forth the water between the three teacups, warming the cups and cooling off the water. You usually only have to do this once or twice. This also has the effect of adding oxygen to the water and will improve the taste of the finished product. All of this does take a little practice to get the hang of, but youll soon be able to sense when you have cooled the water enough. Put about one and a half tablespoons of loose leaf gyokuro into the warm teapot, and pour the hot water from the two filled teacups directly into the teapot. Brew for 2 to 3 minutes, not disturbing the teapot. Lastly, pour from the teapot back into the warm teacups, draining all of the tea to the very last drop. If youve done that correctly and were patient, you should have one of the finest cups of green tea youve ever tasted. For subsequent infusions, simply re-brew for 30 seconds. Its normal for the second infusion to have a more green color than the first. Enjoy your superior cup of green tea! The Hubris of Daas Torah

By Shael Siegel The concept of Daas Torah(following a Torah mentality) is firmly rooted in the recognition that Hashem(God) looked into the torah and created the universe (Breishis Rabbah 1:1). The Torah provides historys agenda, past, present and future, and encompass the worlds every secret. Those who have merited to acquire Torah thus possess the best credentials for effectively addressing the worlds problems, and those who doubt the Torah leaders ability to understand politics thereby redefine the meaning of Judaism. This comment presumably self explanatory wouldnt have been so stunningly audacious, had it been said by a nave yeshiva bachur or a disillusioned kollelnick. Unfortunately, this was written years ago by the late Rabbi Sherer of Agudas Israel as part of an article entitled Torah in the Proper Place, which I stumbled over while researching the theme of authority and dissent in Jewish tradition. Daas Torah, a term of fairly recent origin, is understood to mean that through intense Torah study and the rigorous practice of the mitzvoth, one will have a greater understanding of Gods will. Daas Torah can be a compelling ethos for people in search of guidance, when they voluntarily seek it out. However, when dissenting opinions arent tolerated as in Rabbi Sherers vision and description of Judaism and the stature of the gedolim, than we have the makings of a cult, controlling people through peer pressure and charismatic leadership. Sherer says in the same article that it is the responsibility to remind ourselves and others of the fact that our gedolim are the foremost experts not only in matters of Jewish law, but in social and political issues as well. As a side bar, it should be noted that in Europe, prior to the modern period, lay leaders functioned under the general guidance of rabbinic leadership in areas relating to social and political issues. However, then lay leaders werent educated. The rabbis werent understood to be infallible, but were viewed as default leaders. With the rise of modernity, the positions of authority in areas outside of religion were challenged by those with education and expertise. The gedolim spend their lives immersed in Torah study. They do not study systematically the advanced sciences, political and social theory, philosophy or mathematics. Thus, it would appear that their scope is limited to what they know best Torah. To place them in a position of authority beyond that narrowly defined area is dangerous and irresponsible, because they can negatively impact on those who place all their trust in them. Prior to World War II, when the Gedolim in Eastern Europe had a virtual monopoly on the hearts and minds of its adherents, they in a sense became inadvertent enablers of the anti-semites seeking to destroy Jewry. A case in point was the Belzer Rebbe, Rabbi, I. Rocheach., who forbade his Chassidim from departing Europe to America or Palestine.. There is a documented case of one of his shamashim, who defied his Psak and left for Palestine in 1937. This shamash confided to me, how he begged his Rebbe for a Heter(permission), but was answered in the negative. And so it was with many of the gedolim (with the exclusion of the Gerrer Rebbe) at that time. A Heter couldnt be given, wouldnt be given to allow a member of the community to emigrate to the godless America or to Palestine run by atheistic Zionists. Daas Torah, at the time subscribed to the dictum Shev Val Taaseh - remain in Europe. Interestingly, in 1944, the very same Belzer rebbe who forbade his Chassidim to leave Europe for America or Palestine was smuggled out of Europe and brought to the safety of Palestine where he reestablished the Belzer dynasty years later. So much for their political saavy. The gedolim claim to have enormous expertise in the area of social/economic issues as well. As things have evolved in the haredi community in the United States and Israel a growing number of Bnei Torah can barely eek out a living. Instead of learning skills or acquiring professions they spend their youth in yeshivot and kollelim which cant give them any marketable skills. In most cases they couldnt even be effective rebaim(teachers) because they havent studied and mastered pedagogical skills. In the past these bnei torah sought out shiduchim that had an economic incentive. Either the brides family was wealthy or they owned a business into which he could be integrated. However as their proliferation grows exponentially, there are fewer shiduchim available that carry an economic incentive. There are only so many to go around, as the song goes. The days of the corner grocery store are over where the wife ran the cash register and the ben torah sat in the back learning another blot. In effect, the gedolim(rabbinic scholars) and their nuanced Daas Torah has created a generation of bnei torah(devotees) on the poverty level, who in turn will be raising a generation subscribing to the same values put forward through Daas Torah and thus remaining in the cycle of poverty. Being a member of this new underclass has given rise to a new phenomenon: pride in receiving welfare because this enables the ben torah to continue the study of Torah. Values once revered have been trashed, Jewish pride and culture demeaned, standards lowered, spousal abuse, drugs and the loss of shalom bayis, the foundation of the Jewish life. An additional by-product of Daas Torah is the cultural shift of the kollelnik(married men who study in post rabbinic programs). There was a time, not long ago, when a promising and talented yeshiva student was encouraged to join a kollel. Many of these kollel students attended college at night and graduated on to law schools, medical schools or pursued other professional degrees. There was nobility in this. Those times are over. Torah Umadah doesnt mix. As amatter of fact, it is discouraged. As a result, and due to their inability to compete in the new economic paradigm there is no place to go. As a result there is a proliferation of kollels, most of which are substandard institutions but serve a nobel purpose a place to warehouse a growing number of dclass Jews. The hubris, in espousing the kind of Daas Torah described above, oddly enough, is responsible for the state of the haredi(ultra-orthodox) community. They were so preoccupied and obsessed with opposing the haskalah(enlightenment) and its institutions that they threw out the baby with the bath water. The popular refrain of Rabbi Sofer (a late 19th century Godol) was Chadash - Asur Min Hatorah(reject modernity). Why hadnt the Gedolim encouraged their students to study Rambams (Maimonides) Guide for the Perplexed? In the introduction, writing to his pupil, Joseph Ibn Aknim, Maimonides underscores the absolute necessity of mastering astronomy (science), mathematics and logic, in order that the student will gain the skills of critical thinking. Critical thinking is anathema to Daas Torah. They seek to undervalue individual rights, independent thinking, and the ability to make an informed and intelligent decision. Daas Torah doesnt allow for dissent. It is noble for a faith based Jew to consult with his spiritual mentor for guidance always with the option for accepting or rejecting that advice. Daas Torah, however, seeks to control the individual and thus the community, molding it into its own image, squashing dissent and undermining free will by manipulating peer pressure in order to insinuate its singular control and presence. By Michael Bens Many of us think back fondly to times we cannot possibly remember times and places when voluptuous, even hefty, women were glorified, when a few extra pounds was a sign of beauty rather than a problem to be dealt with . It is a fact that, even today, there are some societies that have quite a different idea about weight gain than we do especially for women. And there are quite a few reasons why this sort of thinking might not actually be misguided. For a start, women with a few extra pounds not obese, mind you, just with some meat on their bones are more fertile than very thin women. Also, a very thin woman might not be able, in a traditional society, to feed her child adequately. Because human ideas of attractiveness follow necessity, its natural that very thin women would not have been considered the most desirable in traditional societies. In fact, its only in a society full of excess, such as ours, that thinness becomes the desired goal. On the other hand, its also true that few if any traditional societies had the problem with weight that we do. Thats because the food we eat today while less nutritious than the food our predecessors ate is also far more plentiful. To put yourself back in the mindset and the body type that typified our ancestors, try following a traditional diet. It takes a bit of willpower more than just a bit, actually. But not because you are about to starve yourself or cut out whole food groups. On the contrary the traditional meals that you will eat are hearty and satisfying. Where the will power comes in, though, is in ignoring most if not all of the food messages that are coming at you through advertising and from the packaged foods in your grocery store. The basic idea is to ignore anything that has a brand name on it. Of course, thats easier said than done. So what do you eat, then? Well, if you choose to follow the Medieval Peasant Diet, for example, what you do is to pick a staple food and stick to it, more or less day in and day out. On special occasions, you can vary from your staple diet for example, you can enjoy a restaurant meal now and then, say once a month or so but for the most part, you stick to your staple diet. A medieval peasant in Europe would have lived, for the most part, on a type of stew or porridge whose main ingredient was beans or peas. A pot of this stew was kept on the back of the stove at all times, and added to as needed. The main ingredients of the stew never varied, but sometimes bits of meat of vegetables in season would be added. And basically, that was it. The medieval peasant would typically eat just one main meal a day, and that would consist of ample helpings of the stew, along with some bread and ale. At other times of the day, people might eat a piece of bread and a mug of ale, or maybe some fruit when it was in season. And once in a while, like on a special feast day or holy day (which occurred rather frequently in Medieval Europe once or twice a month at least) people would eat and drink more than that. There might be roasts of meat, for example, or cakes. But these things were not a part of the day-to-day diet. On the one hand, the Medieval Peasant Diet would probably not pass muster with todays nutritionists. It seems a bit low on certain nutrients, such as vitamins that come from fruits and vegetables. We should remember that todays soil is very depleted compared to soil in the middle ages, so we probably need to eat more fruits and vegetables than they did. Thats something to keep in mind if you want to follow this diet for the long term. On the other hand, keep in mind that this sort of diet with local variations sustained humankind for the vast majority of their history. With the exception of nobility (who, incidentally, were the only people susceptible to modern diseases such as obesity, heart disease, and tooth decay until very recently) this diet kept people healthy and slim for millennia. By Steve Valentino Deep-sea fishing is fishing that involves trolling deep waters with large fishing tackle. Compared to other types of fishing, deep-sea fishing requires more fishing equipment including more line, rods and lures. Rods, reels, bait and tackles are the fishing equipment generally required for deep-sea fishing, and specialized fishing boats are needed for angling. Basically, there are two types of deep sea fishing techniques - trolling and bottom fishing. The fishing technique is chosen, based on the location of the fish. Trolling techniques require keeping the fishing boat at a constant speed of six knots. The bait used is usually a fishing lure that is drawn on a line through the water slightly below the surface of the water. In bottom fishing, the boat anchors in deep water and hooks charged with lures are dropped to the bottom of the sea. Seining, long lining and netting are some other techniques used in deep-sea fishing. Seining is an angling technique used in areas where there are large schools or groups of fish. As the name implies, long-lining gets its name from the length of the lines that are used. It is one of the popular methods of fishing used to attract fish. The bait is strung out on a long line held up by buoys. Netting techniques rely on nets that are set in shallow water around the coasts. The Mississippi Gulf coast, San Diego coast, Cozumel coast and Cancun beaches are among the most popular destinations for deep-sea fishing. Even though deep-sea fishing is specifically for an experienced angler, it is one type of sports fishing that anyone can enjoy. Overcoming Secretive Eating

By Annette Colby Finally you are alone. No one else is around. Maybe youve waited until they are all soundly asleep. You find yourself in the kitchen sneaking food. Sometimes its cake, sometimes its ice cream. Other times youre standing in front of the refrigerator eating leftovers without a plate. Once in a while, you plan ahead, stocking up on your favorite goodies on the drive home. Almost in a trance-like state, you begin eating the foods you dont want anyone to know you eat… in volumes you dont want anyone to know you want. You eat quickly, not wanting to get caught. The irony is that youre not really enjoying the food, youre not really hungry, and you dont know why you are doing it. Initially there is a sense of freedom, exhilaration, and relief. But something odd also occurs. When eating becomes secretive, it becomes both more exciting and more difficult to give up. A devastating cycle begins. The lure of sneak eating progresses, but so does the sense of guilt and failure. Of course, this leads to more sneak eating and on it goes. It becomes a overwhelming cycle that generates a life of its own. EMOTIONAL NEEDS Sneak eating is a metaphor for real needs. These are needs that are typically not addressed. We think we shouldnt have them. Or we dont know how to deal with them. Its usually a time we can be alone, with all our wants and desires. It is a time we dont have to pretend to be capable, competent, pleasant, likeable, strong, and without needs. It is a time to be entirely self-centered, where you dont have to take care of the needs of anyone else and can focus completely on yourself. Sneak eating is about hunger. Hunger that develops because of the deprivation of strict diets, restrictive food plans, and the list of bad foods that you shouldnt be eating. Sneak eating is also a substitute for emotional comfort. A way to nurture the unaddressed feelings of shame, guilt, low self-esteem and loneliness. These feelings may be with you most of the day. It is only when the pace slows down, that the emotions begin to emerge. Not knowing how to handle these powerful emotions, eating follows. Eating in isolation can be a way of stuffing down emotions that seem overwhelming. Eating alone can provide down time without the interruption of family, work, or other responsibilities. Deprivation These feelings are normal for every human being. We each need to take the time, and learn the skills, to sit with our emotions. Recognize that it is essential to know what is going on within our bodies. Know that you are important enough to take the time to be still and be with who we really are. Every person has wants, needs, and desires. We need time to focus solely on ourselves and satisfy our needs. Many of us were taught that these things were selfish and unimportant. We learned to disconnect and hide, lie and make excuses about our needs. We pretend we dont need or want pleasure. We substitute food for what we really needed in life. We end up with a love/hate relationship with food. We try to force ourselves not to eat, especially not to sneak eat. And we punish and criticize ourselves for not being able to stop. Recognize that sneak eating is not about your having shameful desires that cannot be controlled. Instead, sneak eating indicates that you have healthy, natural, human longings that you were not taught how to address. QUESTIONS There are a variety of things you can do to help build-up your willpower and let go of the need to sneak eat. Discover what motivates your behavior by asking yourself a few questions as each incident occurs. * Where are you when you sneak eat? * What were you thinking about right before you ate it? * What were you feeling before you began eating? * What need is this food filling (or stuffing) in your life? * What else, other than food, would fill the wants and desires that you have? * What is it that you really need? Answering these questions and keeping a journal of your answers for future reference will help you understand what prompts your behavior. Your journal entries will serve as a starting place towards noting ideas. By Christopher Ruane Depressed people feel that they are to be blamed when things go wrong and theyre “just at the right place and at the right time” when things go well. Heres an exercise to help you realize your value and reduce your feelings of bad luck towards life events that seem to plague you. Think of a recent memorable event. Describe it. Think about how the contributions of other people, as well as things beyond control, were responsible for this event. List the ways in which your efforts, talents, skills, experience, appearance, etc. were accountable for this event. What rate or percentage of the responsibility/ accountability for this event was attributable to you? Was any of it due to you at all ? Do this for several events, both positive and negative. You have almost always worked for positive events and against depressing events. So, you can now decide if you aren’t causing more positive things than you thought. It is a known fact that depressed people belittle their own abilities. Ok, if you can see yourself as responsible for negative events -over half of the time - see if others aren’t responsible. You will come to realize that your abilities, traits, and contributions can cause good things to happen and that usually external factors beyond your control are explain the negative outcomes. What does the future hold for me ? When we are depressed, we have the tendency to concentrate on the past or to see initially the immediate consequences, and not the long-term positive results of what we are doing now. The sufferings in the past can make the depressed people ignore events and circumstances that might be awkward but very critical or rewarding to their future. Become aware of the effects of your internal voice that no one else hears except you by analyzing the outcome of some activity each day. This is important for us to do, but it is even more essential and difficult for you if you are a pessimistic person with low self-esteem. Reinfore Yourself as a worthwhile personSome depressed people feel that indulging themselves over rewards for any accomplishment is being egotistic. It is normal to pat yourself in the back once in a while. Research has shown that whenever we feel down and troubled we tend to do less pleasant activities, but just doing more enjoyable things is not an assurance to beating symptoms of depression. However, actions do change feelings and can steer you away from depressive illness. You can increase your activity level, find something exciting and worthwhile to engage in. Start with easy tasks, and work up to harder. Reward yourself as you accomplish each task for motivation. It gives you the incentive to keep on trying. Research also indicates that an aerobic exercise program for at least 30 minutes 3 times a week lessen major depression as much or more than medication. Exercise would be good for you in many ways, not just with depression. Some studies shows that exercise alone three or five times a week for 30 minutes reduces symptoms of depression by about 50%. That is as good as taking antidepressants or getting psychotherapy treatment. However if you suffer from severe depression this alone will not cure you, but it will help. Get lots of rest, relaxation, and sleep always. Our personal situation greatly influences your happiness and depression. It has been found that loneliness, dependency, and marital problems often precede an episode of depressive illness. Try to change your depressing surrounding - working conditions, family relationships, stressful situations, and the like. Our mood reflects our environment. What to say when you talk to yourself Reduce the pessimistic and self-criticizing thoughts that characterize depressed people such as: I am always a failure. This is a hopeless case. Im messing up again. It will only get worse. To control these depressing thoughts, try restricting sad thoughts to specific times or places. Then reward yourself upon eliminating negative thoughts, and replace them with positive visions every time you have low moods. Try your best to have a lot more positive thoughts. Be thoughtful then you will feel that your friends appreciate your efforts. Realize that nothing in this world is insurmountable and that every problem has solutions. Be happy. Feeling self-satisfaction may help you swing your low mood from sad to happy. Practice smiling more, acting in a more confident manner, dressing up more attractively, expressing compliments, and acting as though the future will be better. Acting and thinking happy thoughts can change your mood and this feeds into your mind.
